This time, we’re mentally transporting ourselves to Italy, even though we’re physically writing this blog sitting in front of our computers, dreaming of a delicious pizza.

      How much do we really know about the history of pizza?

Pizza is one of the oldest foods in history. It’s known that its earliest versions date back to ancient civilizations like the Greeks, Egyptians, and Romans, who were already cooking it—not as we know it today, but as a type of flatbread with various ingredients on top.‍

The origin of modern pizza dates back to 18th-century Naples, Italy, as a simple, cheap, and popular food for the working class. Over time and across different cultures, it evolved into what we know today as delicious pizza. It was typically made from bread dough, wood-fired, and seasoned with basic ingredients like garlic, oil, tomato, and occasionally cheese.

It wasn't until the 20th century that Italian migration brought this tradition to the United States, where it gained momentum in cities like New York and Chicago, becoming a huge success. There, the Italian pizza was transformed and evolved, adapting into New York-style and Chicago-style deep-dish pizza, leading to new variations and combinations that didn't exist in Italy.

One of the most famous pizzas in the world is the delicious Margherita, which was invented in 1889 to honor the Queen of Italy, Margherita of Savoy. It was created with the colors of the Italian flag: red for the tomato, white for the mozzarella, and green for the basil.

         We’re sharing our favorite spots in Guadalajara so you can enjoy a delicious pizza in your preferred style like a true connoisseur.

         NÁPOLES.

A true classic of Italian cuisine, this restaurant located in the Providencia neighborhood will leave you craving more every time you visit. It holds a special certification from the Associazione Verace Pizza Napoletana. Their food is a spectacle for your palate, and their wood-fired pizzas—not to mention their appearance and incredible authentic flavor—are truly a tribute to Naples and its entire culinary culture.

You can pair your pizza with a good wine or a beer, taking your experience straight to authentic Italy. If you’re in the mood to try more than just one dish, we recommend their pasta al pomodoro with burrata, or perhaps the Mediterranean-style Frutti di Mare. Also, try their lighter sides like the avocado carpaccio, salmon tiradito, or a rustic salad. You’re going to love it as much as we do!

        VULCANOS.

In our opinion, this place is a hidden gem in Guadalajara—a little slice of the stylish city of Chicago right here in our neighborhood. Their delicious deep-dish pizzas, chunky and stuffed with tomato sauce and cheese, are an absolute must-try.

It’s pure art to watch the cheese work its magic as you pull apart a slice. You can order everything from a classic pepperoni or margherita to a meatless option on top accompanied by goat cheese that adds a unique touch.

If we may offer a recommendation, you can't miss their grilled provoleta as a starter—especially if you're a cheese lover. To go with your pizza, choose a salad like the Caprese or something lighter, like the Hefesta, which features a variety of fruits with honey and candied nuts.

Don't forget that Vulcanos shares the neighborhood with us, located very close to our houses in Barrio Mexico the Colonia Americana, so you have no excuse not to give them a try.

         RUPESTRE.

When it comes to experts, this place is easily one of our favorites in the neighborhood and the city. Beyond its charming, cool atmosphere, Rupestre serves some of the best pizza we’ve ever had.

They spent 9 years in Italy perfecting their recipe to bring the very best version to Guadalajara. They offer 15 different pizza varieties to suit every taste, which you can even order half-and-half so you can try more than one. If you love starting with an appetizer before the main event, we recommend the Brussels sprouts marinated in red wine or their spectacular baked artichoke with mozzarella, smoked bacon, and parmesan. You’ll be licking your fingers!

We’re obsessed with the prosciutto and goat cheese pizza, but if you prefer a sweet and savory touch, try the fig pizza—it’s a crowd favorite for being so authentic. To top off your visit, order their famous Power Kiss: pizza dough stuffed with Nutella, dulce de leche, or peanut butter. It’s pure bliss.
